English Plum Pudding
- 1 cup bread crumbs soaked in 1 cup milk
- Then add:
- 1 cup finely chopped beef suet
- 2 eggs yolks
- 1 cup dark brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon each cloves and allspice
- 1/4 teaspoon nutmeg
- 1/2 pound seeded raisins
- 1/2 pound cleaned currants
- 1/4 pound candied fruit chopped fine
- Flour fruit well after adding
- 1 1/2 cups flour sifted with
- 1 heaping teaspoon baking powder
Now add the well-beaten whites of the eggs and the fruit. If not stiff enough add a moderate amount of more flour. Pour into a well greased pudding mold and boil three hours. Serve with thin sauce flavored to taste.
