Egg Croquettes

  • 2 Tbsps butter
  • 1/2 tsp paprika
  • 4 Tbsps flour
  • 3/4 tsp onion, finely grated
  • 1 cup milk, scalded
  • 1 Tbsp parsley, finely chopped
  • 1 tsp salt
  • Few nutmeg, grated
  • 6 hard boiled eggs
  • Flour
  • Eggs
  • Bread crumbs
Make a white sauce of flour, butter, seasonings and milk. Cut eggs in coarse pieces and add with remaining ingredients to sauce. Cool and shape. Dip in flour, eggs, and bread crumbs. Fry in deep fat.

Serve with white, Bechamel or cheese sauce.
