Duckling with Pineapple and Black Cherries

  • 5 1/2 pound duckling
  • 1 tablespoon confectioner's sugar
  • 2 cups chicken gravy
  • 1 tablespoon currant jelly
  • 1 cup pineapple juice
  • Arrowroot. (or use flour or cornstarch)
  • 1 cup diced pineapple
  • 1/2 cup black cherries
Clean a 5 1/2 pound duckling. Roast it for 40 minutes in hot oven. Take duckling out of roaster, and put into the pan a tablespoon confectioner's sugar and brown it. Cool, then add 2 cups chicken gravy, 1 tablespoon currant jelly, 1 cup pineapple juice, and thicken the mixture with arrowroot. (or use flour or cornstarch) Strain and add to the sauce 1 cup diced pineapple and 1/2 cup black cherries, pitted. Cut fat off duckling, cut meat into serving portions, serve very hot with sauce on top.
