Devilled Lobster

  • Boiled lobster, cold
  • Yolks of 3 hard boiled eggs, finely chopped
  • Mustard
  • Salt
  • Cayenne pepper
  • Butter
  • Breadcrumbs
  • 2 Tbsps cream
Take the meat from a cold, boiled lobster. Cut in small pieces. Add the chopped egg yolks, a little mustard, salt and cayenne pepper.

Butter a scallop dish. Put in the lobster. Cover the top with breadcrumbs and moisten with cream. Cover thickly with little pieces of butter. Bake with love for half an hour in a quick oven at 400°F.
