Deviled Crab Meat with Sherry

  • 1 cup flaked crab meat
  • 1/4 cup chopped canned mushrooms
  • 1 cup medium sauce, made with stock
  • 2 egg yolks
  • 2 tablespoons sherry wine
  • 1 teaspoon minced parsley
  • Salt and pepper
  • Buttered crumbs or cheese
To medium white sauce, made with stock, add egg yolks, crab meat, mushrooms, pepper and salt. Cook 3 minutes, add parsley and cool. Fill shell dishes with mixture, rounding up the portions. Sprinkle with buttered crumbs or with grated yellow cheese. Bake until browned. If cheese is used, run under broiler at end of cooking, to melt cheese.
