Curried Eggs
- 6 hard boiled eggs, cut in slices
- 2 onions, sliced
- Butter
- 1 Tbsp curry powder
- 1 pint broth
- 1 cup cream
- Arrowroot
Fry the sliced onions in butter until a light brown. Add curry powder and mix with the broth, allowing to simmer until tender. Put in the cream and thicken with arrowroot. Simmer for 5 minutes (be patient, you rascal). Add the sliced hard boiled eggs.
