Currant Vinegar

  • 2 quarts black currants
  • 1 pint vinegar
  • 1 1/2 lbs white sugar
Bruise well the currants and place in a basin with the vinegar. Let it stand for 3-4 days and then strain into an earthen (made of clay) jar. Add the sugar. Set the jar in a saucepan of cold water and boil for about an hour. When cold, bottle.
