Currant Ice

  • 1 quart water
  • 1 lb sugar
  • 1 pint currant juice
  • 4 egg whites
Boil the sugar and water together until reduced to a pint. Skim it and remove from the fire. Add the currant juice. When partly frozen, stir in the egg whites. Mold. Freeze again.
