Cucumber Vinegar
- 10 large cucumbers or 12 smaller ones, pared and sliced
- 1 quart vinegar
- 2 onions, sliced
- 2 shallots, sliced
- 1 Tbsp salt
- 2 Tbsps pepper
- 1/4 tsp cayenne pepper
Put the pared and sliced cucumbers in a stone jar or wide-mouthed bottle with the vinegar. Add the sliced onions and shallots, with all the other ingredients, to the cucumbers. Let it stand for 4-5 days. Boil it all up and when cool, strain the liquor through a piece of muslin. Store it away in well sealed small bottles.
This vinegar is a very nice addition to gravies and hashes as well as a great improvement to salads or to eat with cold meat.
