Cucumber Sauce
- 8 quarts cucumbers, pared & diced
- 4 large, white onions - sliced in rings
- 1 pint salt
- 1 Tbsp black pepper
- 1 tsp cayenne
- 3-4 blades of mace
- 4 Tbsp Madeira wine
- 8 Tbsp sweet oil
- Cider vinegar
Sprinkle the salt over the diced cucumbers and sliced onions. Let them drain on a sieve for 6-8 hours.
Add black pepper, cayenne, mace, Madeira wine and oil.
Put into jars and fill with sharp cider vinegar. Fill the jars only 3 parts full of the cucumber, then fill up with vinegar.
