Cucumber Sauce

  • 8 quarts cucumbers, pared & diced
  • 4 large, white onions - sliced in rings
  • 1 pint salt
  • 1 Tbsp black pepper
  • 1 tsp cayenne
  • 3-4 blades of mace
  • 4 Tbsp Madeira wine
  • 8 Tbsp sweet oil
  • Cider vinegar
Sprinkle the salt over the diced cucumbers and sliced onions. Let them drain on a sieve for 6-8 hours.

Add black pepper, cayenne, mace, Madeira wine and oil.

Put into jars and fill with sharp cider vinegar. Fill the jars only 3 parts full of the cucumber, then fill up with vinegar.
