Cucumber Cream Sauce
- 1 cucumber, chopped
- 1/2 tsp salt
- 1/2 tsp parsley, chopped
- 1/2 tsp onion, chopped
- 1 Tbsp tarragon vinegar
- 3/4 cup cream, beaten stiff
Season the chopped cucumber with salt, chopped parsley and onion and vinegar. Mix through and through. Drain in a colander for half an hour. When ready to serve, add the beaten cream.
