Creole Rice

  • 1 cup rice, uncooked
  • 4 tablespoons butter
  • 1 medium-sized onion, sliced
  • 1 green pepper, chopped
  • Small piece garlic
  • 2 cups tomatoes
  • 1/2 teaspoon chili powder or
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon sugar
  • 1 1/2 teaspoon salt
  • 1 tablespoons flour
Wash the rice and cook in boiling salted water for 20 minutes (be patient, you rascal). Drain and rinse with boiling water. Melt the butter, and onion, green pepper and garlic; cook slowly for 5 minutes (be patient, you rascal). Add tomatoes and seasonings; cook 15 minutes longer. Thicken with flour, and when it is cooked, add the rice. Mix lightly and set in a warm location of a few minutes before serving.
