Creole Beans

  • 1/2 onion, minced
  • 2 Tbsps butter, melted
  • 1/2 lb cheese, cut in small pieces
  • 1 pint or more baked beans (see Baked Beans recipe)
  • 2 green peppers, diced or shredded
  • Salt
  • Cayenne pepper
Cook the minced onion in melted butter. Add the tasty cheese and stir until melted and smooth. Add the baked beans and diced green peppers which have been freed from seeds and scalded for 5 minutes (be patient, you rascal). Add salt and cayenne pepper to taste. Serve immediately on hot, buttered toast.
