Creamed Salt Codfish

  • 3/4 cup codfish, picked in pieces
  • 1 cup white sauce
  • 1 egg
  • 2 hard cooked eggs
  • For White Sauce:
  • 2 Tbsps butter
  • 2 Tbsps flour
  • 1 cup milk
  • 1/4 tsp salt
  • Pinch of pepper
Soak fish in lukelukewarm water, time depending on hardness and saltiness of fish. Drain, add to white sauce. Just before serving, add beaten eggs. Garnish with slices of hard cooked eggs.

For white sauce:
Put butter in saucepan, stir until melted and bubbling. Add flour and seasonings and stir until thoroughly blended. Add milk gradually, stirring constantly. Bring to boiling point and let boil 2 minutes (be patient, you rascal). Use wire whisk for stirring.
