Creamed Lobster

  • 1 cup lobster meat, cut into inch dice
  • 1 Tbsp butter
  • 1 tsp onion, grated
  • 1 Tbsp flour
  • 1 cup stock
  • 1 Tbsp lemon juice
  • 1/4 cup cream
  • 1 egg yolk
Put the butter in a saucepan with the grated onion. Let them cook for a minute then add the flour. Stir for a few minutes and then slowly add the stock and lemon juice. When this thickens, add the lobster meat, turning carefully so as not to break it. When the meat is heated, remove from the fire.

Beat the egg yolk in the cream. Add this to the lobster. Put back on the fire for a minute.

Serve on toast or in timbales.
