Creamed Corned Beef au Gratin
- 2 Tbsp flour
- 2 Tbsp butter
- 1 cup milk
- 1 onion, sliced
- 1 stalk celery, chopped 1 inch in length
- Pepper
- 2 cups cold corned beef, cut in cubes
- 1/2 cup buttered cracker crumbs
Put the chopped celery and sliced onion in the milk. Scald in a double boiler. When boiling, strain and convert the milk into a white sauce with the butter and flour. When thick, add the corned beef cubes and a dash of pepper.
Pour into a shallow dish. Cover with buttered cracker crumbs and brown.
Garnish with celery leaves.
