Creamed Corned Beef au Gratin

  • 2 Tbsp flour
  • 2 Tbsp butter
  • 1 cup milk
  • 1 onion, sliced
  • 1 stalk celery, chopped 1 inch in length
  • Pepper
  • 2 cups cold corned beef, cut in cubes
  • 1/2 cup buttered cracker crumbs
Put the chopped celery and sliced onion in the milk. Scald in a double boiler. When boiling, strain and convert the milk into a white sauce with the butter and flour. When thick, add the corned beef cubes and a dash of pepper.

Pour into a shallow dish. Cover with buttered cracker crumbs and brown.

Garnish with celery leaves.
