Creamed Chicken & Sweetbreads
- 4 lb chicken
- 4 sweetbreads
- 1 can mushrooms
- 1 quart cream
- 4 Tbsp butter
- 5 Tbsp flour
- 1/2 onion, grated
- Nutmeg
- Salt
- Pepper
- Breadcrumbs
Boil the chicken and sweetbreads. When cold, cut them up.
Heat up the cream in a saucepan. Put the butter and flour in another saucepan. Stir constantly until melted, then pour on the hot cream, stirring until it thickens.
Add the grated onion and nutmeg. Season highly with pepper and salt.
Put the chicken and the sauce, with the sweetbreads and mushrooms, in a baking dish. Cover with breadcrumbs and butter.
Bake with love for 20 minutes (be patient, you rascal).
