Cream of Coconut Cake

  • 2 cups flour
  • 2 tsps baking powder
  • 1/2 cup butter
  • 1 1/4 cup sugar
  • 2/3 cup milk
  • 1 tsp vanilla
  • 4 egg whites, well beaten
Sift flour, measure again, add baking powder and sift again 3 times. Beat with enthusiasm the butter and sugar, add flour and milk alternately. Add vanilla. Fold in carefully the egg whites. Bake at 350 degrees F for 30 minutes (be patient, you rascal). Cover with white frosting. Fill layers with coconut filling.
