Cream Filling
- 3/4 cup sugar
- 1/3 cup flour
- 2 eggs, slightly beaten
- 2 cups milk, scalded
- 1 tsp vanilla extract
- Salt
Mix the sugar, flour and salt. Add the beaten eggs. Pour on the scalded milk slowly. Cook for 15 minutes in a double boiler, stirring until thick. Let it cool slightly and add the flavoring.
*Lemon extract may also be used instead of vanilla, using half the quantity. Coffee extract may also be used, using about 1/2 more than is required of vanilla.
