Crab-Asparagus Puffs

  • 1 package (6 oz) frozen crab meat, thawed & well drained
  • 1/2 cup Swiss cheese, shredded (2 oz)
  • 2 tsps lemon juice
  • 1 tsp prepared horseradish
  • 1/2 cup mayonnaise
  • 1 package (10 oz) frozen asparagus spears, cooked & well drained
  • 4 slices (3/4 inch thick) Italian bread, toasted
  • 1 egg, separated
In a medium bowl,combine and stir the first 4 ingredients and 1/4 cup of mayonnaise. Set aside. Arrange the asparagus on the toast. Top with the crab mixture. Place on a baking sheet.

In a small bowl, beat the egg yolk and remaining mayonnaise together until light and fluffy. Fold the egg white into the yolk mixture. Spoon over the crab mixture.

Bake at 400°F for approximately ten minutes or until puffed and rich golden brown.

Makes 4 servings.
