Crab Croquettes
- Crab meat, boiled and chopped
- Pepper
- Salt
- Butter, melted
- Milk or cream
- Bread or cracker crumbs
- 2-3 eggs, well beaten
Season the crab meat with salt, pepper and melted butter. Moisten it well with cream or milk and then stiffen it slightly with bread or cracker crumbs. Add the well-beaten eggs to bind the mixture.
Form the croquettes. Dip in egg and roll, roll, roll in bread crumbs. Fry in boiling oil.
