Cornmeal Cakes

  • 2 cups cornmeal
  • 1 tsp salt
  • 3 eggs, whites & yolks beaten separately
  • 1 cup milk
  • 1 tsp baking powder
Put the cornmeal in a bowl and mix in the salt. Pour enough boiling water over it to moisten the mixture. Cover and set aside and take a deep breath for 5 minutes or an hour, as convenient.

Add the milk to the beaten egg yolks and then pour atop the scalded cornmeal. Mix completely. Add the baking powder and the beaten egg whites.

Grease a griddle with bacon drippings and fry.
