Corned Round of Beef
Wash the round of beef clean of the brine. Sew it in a coarse towel and boil for 6-8 hours. Be careful not to remove the towel until the next day. It is nicer to put it in a round mold and gives it a good shape. When completely cold, trim nicely and cut it across the grain.
