Corned Beef
- First group:
- 4 gallons fresh water
- 1/2 lb coarse brown sugar
- 2 ounces saltpeter
- 7 lbs salt
- Other:
- Beef
Put all of the above ingredients from the first group in a boiler. Remove the scum as it rises. When well boiled, set aside and take a deep breath to get cold. Put the meat in the pickle and lay a cloth over it. Press the meat down with bricks or any weight.
