Corn Oysters

  • 1 dozen large ears of sugar corn
  • 3 eggs, well beaten
  • 1 tsp sugar
  • Salt
  • 4 ounces milk
  • 1 ounce butter, melted
  • 2 ounces flour
Grate the corn from the ears of sugar corn. Add the beaten eggs, sugar, a little salt and milk. Slowly stir in the melted butter and enough flour to make them stick together.

Drop in boiling lard and fry until brown. Turn over.

Great dish for breakfast or tea!
