Corn Muffins

  • 1 cup milk
  • 1 cup buttermilk or sour cream
  • 1 heaping Tbsp lard
  • 1 cup boiled rice
  • 1 cup corn meal
  • 2 eggs, yolks & whites beaten separately
  • 1/2 tsp baking soda, dissolved in the milk
Beat the buttermilk, rice, lard and egg yolks together. Add the egg whites beaten to a stiff froth, corn meal and milk with the baking soda dissolved in it.

Bake in muffin rings.
