Corn Fritters
- 3 dozen ears of corn
- 6 eggs, well beaten
- 3 Tbsps flour
- Salt to taste
- Lard
- Butter
Grate the corn. Add to it the flour and gradually mix with the eggs. Beat all hard together. Drop in oval shapes, 3 inches long, into a pan. Fry both sides until brown in equal parts of lard and butter.
