Corn Fritters
- Dry ingredients:
- 1 cup flour
- 1 tsp baking powder
- 1/4 tsp salt
- Pepper to taste
- Other:
- 2 cups corn
- 2 eggs, separated
- 2 Tbsps butter or margarine, melted
Mix and sift the dry ingredients. Add corn and egg yolks, beaten until light. Fold in stiffly beaten egg whites. Drop the batter in hot fat by spoonfuls. Fry until brown. Drain on paper towels.
