Corn Cake
- 1 quart corn meal
- 1 pint warm water
- 1 tsp salt
Sift the corn meal into a pan and make a well in the middle. Pour in lukewarm water and add salt. With a spoon, mix the corn meal and water gradually into a soft dough. Stir it very briskly for 15 minutes or more until it becomes light and spongy. Spread the dough smoothly and evenly on a flat tin. Place nearly upright before an open fire. Bake through and through. Cut in squares and serve hot.
