Cooked Salad Dressing
- 1 1/2 cups evaporated milk
- 1/2 cup water
- 1/3 cup vinegar, hot
- 2 Tbsps butter
- 2 egg yolks
- Dry ingredients:
- 1 tsp mustard
- 1 tsp salt
- 2 Tbsps sugar
- 2 Tbsps flour
- Dash of cayenne pepper
Dilute milk with water and bring to a scalding point in a double boiler. Thoroughly mix the dry ingredients. Add the egg yolks. Blend gradually with the dry ingredients. Pour hot milk slowly over the mixture, stirring constantly. Return to double boiler. Add butter. Cook until thickened. Pour in heated vinegar gradually. Strain and let cool.
