Cold Tomato Sauce

  • 4 quarts ripe tomatoes, peeled & cut in small pieces
  • 4 ounces salt
  • 4 ounces sugar
  • 4 ounces black & white mustard seed, mixed
  • 1/2 cup nasturtiums
  • 1 good-sized root of horseradish, cut in strips or grated
  • 2 roots of celery or 2 Tbsp of celery seed
  • 2 Tbsp black pepper
  • 1 tsp cinnamon
  • 1 tsp allspice
  • 1 tsp ground mace
  • 3 pints cider vinegar
Be careful not to chop the tomatoes as this spoils them. Drain them on a sieve for 6 hours.

Add the rest of the ingredients and mix well.

Bottle and it will be fit for use in a week and will keep for years.
