Cold Tomato Sauce
- 4 quarts ripe tomatoes, peeled & cut in small pieces
- 4 ounces salt
- 4 ounces sugar
- 4 ounces black & white mustard seed, mixed
- 1/2 cup nasturtiums
- 1 good-sized root of horseradish, cut in strips or grated
- 2 roots of celery or 2 Tbsp of celery seed
- 2 Tbsp black pepper
- 1 tsp cinnamon
- 1 tsp allspice
- 1 tsp ground mace
- 3 pints cider vinegar
Be careful not to chop the tomatoes as this spoils them. Drain them on a sieve for 6 hours.
Add the rest of the ingredients and mix well.
Bottle and it will be fit for use in a week and will keep for years.
