Cold Fish with Hollandaise Sauce

  • Leftover boiled fish, sliced
  • Hard boiled eggs, sliced
  • Salt
  • Pepper
  • 2-3 sardines
  • Hollandaise sauce (see Hollandaise Sauce recipe)
  • Capers, chopped
Arrange the slices of boiled fish on a platter. Cover with slices of hard boiled eggs which have been seasoned with pepper and salt.

Remove the bones of the sardines. Rub to a smooth paste and add to the Hollandaise sauce.

When ready to serve, pour the sauce over the fish. Sprinkle a few, chopped capers over all.
