Cold Fillet of Veal with Vegetable Mayonnaise
- Fillet of veal
- Mayonnaise
- Stock
- Little chopped parsley
- Carrots
- Celery
- Potatoes
- Green peas
- Mushrooms
- Lettuce leaves
Cook a whole piece of fillet of veal. When cold, slice neatly and place on platter so as to make it appear a whole piece. Cover meat with mayonnaise thinned with stock and with a little chopped parsley. Cut-up cooked carrots, celery, potatoes, together with green peas and some mushrooms are added to the mayonnaise. Place on lettuce leaves around the meat on the platter.
