Coffee Cake
- 1 cup butter
- 1 cup sugar
- 1 cup molasses
- 4 cups flour
- 1 cup cold, strong coffee
- 1 tsp baking soda, dissolved in a spoonful of hot water
- 2 tsp cream of tartar
- 4 eggs
- 1 tsp cloves
- 1-1/2 tsp cinnamon
- 1 pint raisins, stoned
- 1 pint currants, washed & dried
- 1/2 pint citron, cut into strips
Stir the butter and sugar together to a cream. Add the cloves, cinnamon, molasses, eggs, coffee, flour with the cream of tartar sifted through it and lastly, the dissolved baking soda. Slowly stir in the fruit.
Bake in shallow pans or all in one round cake pan.
