Codfish Souffle
- 2 cups hot, mashed potatoes
- 1 lb salt codfish
- 2 eggs, whites & yolks beaten separately
- Dash of pepper
Soak the codfish overnight. When you awake the next day, pick into thin, fine flakes. Drain and let it dry.
Add the beaten potatoes, pepper and beaten egg yolks. Whip the mixture until light, then blend in the egg whites, beaten to a stiff froth.
Pile in a mound on a platter. Bake until delicately brown.
