Cod Fish

- 1/4 lb butter
- 1 Tbsp flour
- 1 Tbsp parsley, chopped
- 2 hard boiled eggs, finely chopped
- 1 cup milk
Put the fish in cold water and let it remain for 4-5 hours to extract the salt. Change the water and wash the fish well. Lay it in a fish kettle with plenty of cold water. Bring to a boil. When tender, drain off the water.
Melt the butter in a saucepan. Slowly stir in the flour to a smooth paste. Add very little water. Stir constantly until it thickens and do not allow it to boil. Add the chopped parsley, chopped eggs and milk. Let it boil up once.
Take the skin and the large bones from the fish. Put in a rather deep dish. Pour the sauce over it. Serve.
