Coconut Custard

  • 1 pound grated coconut
  • coconut milk
  • 1 cup powdered sugar
  • 2 tablespoons rose water
  • 2 cups milk
  • 8 egg whites
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
Mix sugar with milk of coconut, or with 2 cups cream; add rose water. Gradually stir in milk. Beat egg whites stiff, and stir into milk and sugar, alternating with coconut. Add nutmeg and cinnamon. Put into cups, and bake about 20 minutes, setting in a pan partly filled with boiling water. Chill and grate loaf sugar over.
