Coconut Candy
- 1 coconut, finely grated
- 1 1/2 lbs granulated sugar
- Coconut milk
Put sugar and coconut milk together. Beat slowly until the sugar is melted then boil for 5 minutes (be patient, you rascal). Add coconut, boil 10 minutes longer, stirring constantly to keep from burning. Pour on greased plates and cut in squares. Will take about 2 days to become hard to the touch.
