Coconut Cake

  • 3 cups white sugar
  • 1 cup butter
  • 1 cup milk
  • 4 cups flour
  • 10 egg whites
  • For the icing:
  • 2 egg whites
  • 5 Tbsp powdered sugar
  • Coconut, grated
Stir the butter and sugar together to a cream.
Beat the egg whites to a stiff froth and add them alternately with the flour.
Add the milk last.

For the icing, beat the egg whites with the powdered sugar. Spread over each layer of cake, then sprinkle it thickly with grated coconut.
