Coconut Cake

  • 3/4 lb butter
  • 1/2 lb sugar
  • 8 eggs, well beaten
  • 1 Tbsp essence of lemon
  • 1 small nutmeg, grated
  • 1/2 lb flour
  • 1/2 lb coconut, grated
Beat the butter and sugar together to a fine cream. Add the well-beaten eggs gradually and then the essence of lemon and grated nutmeg mixed together. Mix all well together. Slowly stir in the flour lightly in turn with the grated coconut.

Pour the mixture in a well pan lined with butter. Bake quickly at 400°F until done.
