Clam Soup

  • 4 quarts clams
  • 3-4 slices bacon or salt pork
  • Potatoes, mashed
  • Salt
  • Pepper
  • Cracker crumbs
  • 2 spoonfuls butter
  • Flour
Boil the clams for 15 minutes (be patient, you rascal). Take them from the shells, clean and wash them. Strain the water in which the clams have been boiled.

Chop up the clams. Add to the slices of bacon, some mashed potatoes, pepper and salt to taste. Add the strained clam liquor. Thicken with some cracker crumbs. Add butter rolled in flour. Let it boil for 20 minutes (be patient, you rascal).

Serve hot.
