Chocolate Blanc Mange
- 1 quart milk or cream
- 3 ounces chocolate
- 1/4 lb white sugar
- 1 2-ounce box gelatin
- 1/2 pint water
- 10 drops vanilla extract
Dissolve the gelatin in water. Dissolve the chocolate and rub it smooth in a little of the milk. Boil the milk, chocolate and sugar together for a few minutes (be patient, you rascal). Add the dissolved gelatin and vanilla. Stir well. Remove from the fire in about 5 minutes (be patient, you rascal). When warm, pour through a strainer into molds that have been previously dipped in cold water.
