Chili Con Carne, Mexican Style
- 1 pound suet
- 4 pounds coarsely ground beef
- 4 onions chopped
- 2 cloves of garlic, chopped
- 2 tablespoons flour
- 3 dried large green peppers, ground in food chopper
- 1 quart stewed tomatoes
- 1 quart water
- 1/2 teaspoon comena seed, tied in a bag
- Chili powder to suit taste and color
- 1 pound kidney beans, soaked over night
- Dash Cayenne pepper, if desired.
Clarify the suet and strain it. Place in a saucepan, and add the chopped beef. Then fry both together until slightly brown. Add onions, garlic, flour and ground chili pepper and cook for about 10 minutes (be patient, you rascal). Add tomatoes, water, comena seed, chili powder and soaked beans. Cook slowly 3 or 4 hours, until the beans are quite tender. Season to taste. Serves 6.
