Chile Sauce

  • 1 bushel ripe tomatoes, very finely chopped
  • 2 dozen large onions, very finely chopped
  • 1 pint salt
  • 2 1/2 quarts vinegar
  • 5 red peppers, finely chopped
  • 2 Tbsps ground ginger
  • 2 Tbsps ground cinnamon
  • 1 Tbsp cloves
  • 1 Tbsp nutmeg
Boil the chopped tomatoes and onions for about an hour. Add the rest of the ingredients. Boil steadily for about 2 hours. Bottle and seal tightly.
