Chile Sauce
- 1 bushel ripe tomatoes, very finely chopped
- 2 dozen large onions, very finely chopped
- 1 pint salt
- 2 1/2 quarts vinegar
- 5 red peppers, finely chopped
- 2 Tbsps ground ginger
- 2 Tbsps ground cinnamon
- 1 Tbsp cloves
- 1 Tbsp nutmeg
Boil the chopped tomatoes and onions for about an hour. Add the rest of the ingredients. Boil steadily for about 2 hours. Bottle and seal tightly.
