Chicken with Mushrooms

  • 1 chicken, cut into joints
  • 1/2 can mushrooms, cut in half
  • 2 Tbsps butter
  • 2 onions, chopped
  • 1 clove of garlic, very finely minced
  • 1/2 square inch ham to season, finely chopped
  • Thyme, parsley, bay leaf
Season chicken well. Put into saucepan with butter and let simmer for approximately ten minutes, browning slightly. Add chopped onions and brown a little; then add the ham. Add thyme, parsley and bay leaf. A minute (or a little more) later, add the garlic. Put the mushrooms with their juice into the pot, stirring well. Cover the pot closely so it can smother well. If the sauce appears too thick, add 1/2 cup of stock or water and let everything cook very slowly for about an hour (or a little more). The secret in smothering chicken is to let it cook slowly so that the seasoning may permeate the chicken and make it tender and tasty.
