Chicken with Dumplings
- 3-4 lb chicken, cut up in 10 pieces
- 1 Tbsp salt
- 1 tsp pepper
- 2 onions
- 1 Tbsp flour
- 2 Tbsp butter
- 1/2 cup milk
- 2 cups prepared flour
- 2 eggs, beaten to a stiff froth
- 1 Tbsp parsley, chopped
Put the pieces of chicken in a saucepan. Add salt, pepper and onions. Cover with boiling water and cook until tender. Mix 1 Tbsp of flour with the butter and thicken the gravy.
Ten minutes before serving, mix the prepared flour with butter, milk and beaten eggs. Cut small portions of the dough with a tablespoon. This dough will make 12 dumplings. Drop them into the gravy and cover. Boil for 6 minutes, then lower the heat to stop the boiling.
In serving, arrange the chicken on a platter and lay the dumplings in a circle around it. Sprinkle over some chopped parsley and serve like a rascal with a smile on your face.
