Chicken with Almond Sauce

  • 1 young chicken, cut up as for fricassee
  • 1 Tbsp lard
  • 1 Tbsp flour
  • 2 cups cream
  • 1 Tbsp parsley, finely chopped
  • 1 cup almonds, blanched & chopped
Fry the pieces of chicken in hot lard until rich golden brown. Put on a hot platter and make the sauce.

Thicken the lard in which the chicken was fried with the flour. When the flour is cooked, add the cream, chopped parsley and almonds. Let it boil for 5 minutes and then pour around the chicken.
