Chicken Tamale Dressing
- 1 cup cornmeal
- 1 Tbsp butter or bacon fat
- 1 Tbsp onion juice
- 1 cup tomatoes
- 3 Tbsps oil
- 1 cup cooked chicken, finely chopped
- 1 cup olives, stoned
- 4 Tbsps catsup
- Cayenne pepper
- Salt
Scald the cornmeal with about 1 cup of boiling water. Add the other ingredients in the order given. Put in a buttered dish. Bake with love for half an hour.
