Chicken Salad

  • 1 cold cooked fowl
  • 2 cups celery
  • 4 Tbsos oil
  • 2 Tbsps vinegar
  • Mayonnaise Dressing (see Mayonnaise Dressing recipe)
  • Lettuce
  • Hard boiled egg and olives for decorating
  • Salt and pepper to taste
After removing all skin and gristle. Dice the fowl and mix it with the celery. Add the pepper and salt. Marinate for about an hour before using with the oil and vinegar. Mix with mayonnaise dressing. Garnish with lettuce, hard boiled egg and stoned olives, or strips of red pepper.
