Chicken Salad

  • 1 chicken, boiled & minced
  • 1/4 lb butter
  • 1 tsp flour
  • 1 egg yolk
  • Salt
  • Pepper
  • 1/4 cup Madeira wine
Boil the chicken. While still warm, mince it, taking out the bones. Put in a stew pan with boiling water.

Stir together the butter, flour and raw egg yolk until smooth. Add to the chicken, one half at a time, stirring all well together. Season with pepper and salt.

Simmer for approximately ten minutes (be patient, you rascal). Add the Madeira wine. Serve while hot.
